Winter citrus salad
Who says fruits are just for summer?!? In fact, it's important to get your fruits and vegetables in every day and incorporating fruit into a salad is a great way to do it!
INGREDIENTS
3.5 oz arugula
1 avocado
1 orange
1 blood orange
1 grapefruit
⅓ cup walnuts
Dressing
2 tbsp olive oil
2 tbsp orange juice
1 tsp Maple syrup
salt & pepper
METHOD
- Roughly chop and toast the walnuts in a skillet over medium heat until golden brown and fragrant. 
- Finely slice the avocado. Peel and slice the oranges and grapefruit. 
- Press excess orange juice from the peel to use for the dressing. 
- In a small bowl, whisk together all dressing ingredients, and season with salt and pepper. 
- Arrange arugula, avocado, oranges, and grapefruit on a serving platter. 
- Top with toasted walnuts and drizzle with the dressing.
